A hundred years ago artichokes were eaten by the aristocracy or peasants, but not by the nice middle-class folk. You needed to get your fingers yucky to truly enjoy an artichoke, stripping off the leaves and sucking the bases until you got to the tender heart, or eating them crisp and deep fried or simmered in chicken stock and olive oil with new potatoes till the sauce is oozy and artichokey and luscious. And wonderfully messy to eat.
